Sausage & White Bean Stew
Sausage and white bean stew is a classic Italian peasant dish. My guess is that it originated as a way to feed a whole family with a little bit of meat. You can use any sausage in this dish. I usually make it with Sweet Italian Sausage but this time I had Keilbasa on hand.... any leftover meat is fine too: chicken, beef, even fish can be thrown into this stew along with any type of green vegetable you have on hand. Escarole and kale work just as well as spinach in this versatile stew.
PS: My husband was genuinely surprised when I whisked him away for a romantic ski weekend for his 50th birthday last week... time without kids is oh, so important.

Sausage & White Bean Stew

preparation time: 15 minutes serves 4 - 6
Ingredients: 3 tablespoons of extra-virgin olive oil 1 large onion chopped 3 cloves of garlic minced 1 pound Italian sausage chopped 2 15 ounce cans of cannelloni beans 1 teaspoon of oregano salt and pepper to taste 1/2 cup of beef broth 1 9 ounce bag of baby spinach
Directions: 1) Heat oil on medium high in a large skillet. Sauté onions and garlic until limp, do not brown the garlic. Remove from pan.
2) Brown sausage, once it is cooked return onions and garlic to pan. Add beans (do not drain), oregano, salt and pepper and beef broth. Bring to a boil.
3) Once mixture is boiling add spinach and turn off the heat. Let the stew sit for at least 10 minutes if not longer. Check salt and pepper before serving with rustic bread or potatoes. white beans , sausage , spinach , Italian recipe , bean stew http://verygoodrecipes.com/italia
